A Recipe for Pi(e) Day

Hello and happy 3.14. In honor of National Pi Day, here’s a recipe for a Hawaiian-inspired treat, macadamia nut pie. Enjoy!

  • 1 cup dark corn syrup
  • 2/3 cup corn syrup
  • 2 teaspoons vanilla extract
  • 3 eggs, slightly beaten
  • 1 jar (6.5-8 ounces) macadamia nuts
  • 1/4 cup butter, softened
  • 1 9” pie crust, unbaked
  •  coconut pressed into crust, optional

In a large bowl, mix together sugar, corn syrup, eggs, and vanilla extract. Stir in butter and nuts.

Bake in a 350 degree Fahrenheit oven for 45-50 minutes or until pie is set. Let cool and savor.
